Gluten-Free Protein Pancakes

To say that this week has been crazy, would be an understatement of epic proportions. With the school year coming to a close, getting things in order for school next year, my daughter being in two upcoming dance recitals, and the usual round of summer birthdays coming about, and my downstairs floor being replaced today, I'm just about to my limit.

One thing that did make this week more easy was having these wonderful protein packed pancakes ready to go for breakfast in the morning. Not only did they keep me full and satisfied to get through the craziness of the week, but they also tasted amazing.

I had to do a lot of my cooking ahead of time since my stove is currently out in the garage. Everything had to be up off the floor for it to be replaced. Like I said... madness is my life right now, hah!...

Spring Asparagus Salad & Honey Mustard Vinaigrette

Spring vegetables are still in full swing for another couple of months, so naturally I'm taking full advantage of that. One of my favorite spring vegetables has to be asparagus. I love it's simple flavor and complete versatility to be the part of just about any meal. So, this week for lunch I decided to dive back into salads and thought that adding some cool asparagus to the mix would be perfect.

First of all... Happy 6th Birthday Lily!

Everything Omlettata

Breakfast. ...The most important meal of the day, and for me, often the most overlooked one! Honestly, I have to sometimes trick myself or lure myself by way of new and interesting breakfasts just to get something in my stomach. Avocado Egg Salad

What can I say? After the large meals and treats that often come with holidays, I always end up feeling as if my body needs a reprieve from it all. Especially when there's a few more still just around the corner!

This avocado egg salad is the perfect way to fill my plate and I with the good stuff while keeping it light, healthy, and super delicious. I've been a huge fan of avocado for a while now, but lately's it's almost been out of control. So much so that I'm now putting in my egg salad!

That might sound a little strange, but hear me out. Avocados are often a great swap for mayonnaise because of their creamy texture. Plus, those avocados have a lot more vitamins than you'll find in mayo anyway. So it's just a win, win...

Veggies in the Raw Bistro Box

It's been a good while since I worked on my skills at adult lunch boxes or 'bistro boxes' as I've seen them called. I've made a few in the past, and I've always enjoyed them for more than one reason.

I love that these bistro boxes are small, filling, packable, and so easy to whip up a few of them to have on hand through out the week. I've found that if I have to make my lunch every day that I will tend to either skip it all together (which is a bad idea) or trade out my more health conscious lunch for something that's quicker and more grab-and-go (even worse!)

When I have my little prepped bistro boxes though, I don't have any excuse to not sit down and enjoy my wholesome and stackable style meal...
