Healthified Meatloaf Cupcakes & Cauliflower Mash

It's been a super long time since I made these Meatloaf Cupcakes. As in... years. A lot has changed since then, especially my tastes and cooking style. The very first time that I made these, they were in the traditional manner. Plain old ground beef and mashed potatoes. Nothing fancy. Nothing 'healthified'.

Today though, I've lightened these up and made them a little more wholesome by adding in some veggies like carrots, and zucchini too! I also used an extra lean ground beef which I kept moist and full of flavor by adding in an egg and reduced sugar ketchup. The vegges also help to keep the lean meat from drying out. Of course, I also used a cauliflower mash instead of straight up mashed potatoes to get even more vegetable goodness in there.

These are packed. PACKED. Loaded up entirely with vegetables, and the best part is that you would never guess it!...

Cheesy Chicken & Vegetable Casserole

I'm not sure why, but I've sort of been in pasta mode lately. Maybe it has something to do with the fact that I have so much stocked up in my pantry by now that I feel I need to dwindle down the boxes. When I got a beautiful fresh summer squash and two ears of local corn in this past week, I knew that I wanted to do something fun with pasta for an end-of-summer sort of casserole. With everything taking on a rather yellow color, I wanted to throw in some chopped spinach as well to give another hue. It's all about eating the rainbow.

I had actually done a test run of this recipe a couple weeks ago, and was pretty pleased with the results. Of course, I did make a few tweaks here and there to fine-tune. The whole idea of this dish was to be something quick and easy for a weeknight dinner while also giving a creamy-dreamy sort of 'mac-n-cheese' inspired bite, though maybe on a more adult level...

Zucchini Noodle & Mozzarella Salad with Lemon Basil Vinaigrette

After a couple of weeks of visiting family, busy schedules, and meat heavy meals, my brother and I decided to call it. Together we're going mostly vegetarian this week with just one chicken meal planned and one 'wild card' night in the mix. While I generally have kept most of my vegetarian recipes rather hearty, sometimes... less is more.

This light and simple zucchini noodle salad is completely bursting with bright flavors, and with such few ingredients and low effort too! It makes for a perfect little lunch or even a decently sized side dish for a dinner. I'm thinking along side some baked Italian chicken breast. Yum!...

Easy Ratatouille & Cheesy Parmesan Polenta (Crock Pot)

So, I've been on the hunt for a good way of making ratatouille lately. I had tried it many many years back when I was a brand new mother. But, it didn't turn out at all the way that I had wanted. It soured my opinion on ratatouille and eggplant for years to come. Eggplant is not my most favorite vegetable, but ratatouille is one way that I will eat it.

I think that I'll eat almost anything if it's got pasta sauce and/or zucchini involved.

A few weeks back, I had tried this recipe out while my grandmother was still visiting. It got rave reviews from around the table. As it turns out, I got an eggplant and an acorn squash in my most recent local produce box, and knew exactly what I wanted to do with it. Another ratatouille!...
