I'm always super excited around here for the release of movies. It's always been fun to have themed movie nights where I create dished inspired by the movie we're watching. One of the last movies we saw was 'Captain Underpants: The First Epic Movie' at the drive in movie theater this summer. It was really such a fun kids movie. So, I thought with it about to be released that I would make a Captain Underpants themed treat!

Captain Underpants is perfect for family movie night. It's a film with a lot of heart. I love that the story explores the great friendship between Harold and George and their connection through a love of writing and creativity...

White Bean Avocado Dip

I'm a little bit of an avocado fiend. Okay, so... a lot of an avocado fiend. I could easily go through a whole avocado every day and completely all on my own. So when I was trying to decide what I wanted to do with these Super Beet Chips, I figured it just had to be something with avocado and it needed to be a dip.

This White Bean Avocado Dip is super easy to make, full of flavor, and is the perfect dipper companion. It's somewhere between a guacamole (with it's Mexican inspired flavors of lime and cilantro) and a hummus (with garbanzo beans being my bean of choice.) The best of both worlds, if you ask me...

We all know that summer is all about cook outs and block parties. Of course, here in Texas, we have to get out there early in the day or wait until the sun is starting to set to have a more enjoyable temperature. That being said, I know that when I'm entertaining it's all about simple meals with bold flavors and a nice cool glass of wine to pair!

One of my favorite quotes of all times has to be, "I enjoy cooking with wine, sometimes I even put it in the food...", and today this was my mantra! I decided that in the midst of my entertaining, I would create a lightened up white wine cream sauce to pair with some lemon pepper chicken that was cooked up in the crock pot. Hey, the oven is my enemy right now when it's 100+ degrees outside...

So, last week I had posted a picture of this fabulous little lunch/snack that I had for myself, and seeing as it managed to grab quite a bit of attention I thought I would do something else similar this week. Though I still might share the original soon too!

Grapefruit is very much so in season here in Texas right now, and as such, I wanted to make full use of it since it's one of my most favorite circus fruits. I find that it's a perfect addition to any breakfast or lunch because of it's brightness. It just adds a little bit of a pep to my step and cheers me on through my day...

Skinny Nog Pecan Blondies & Nog Cream Cheese Sauce

As we're getting into the thick of the holiday season, I wanted to step out of the box again and create a lighter take on one of my most favorite desserts in the world, a blondie! Any blondie just won't do. It had to be full of pecans, white chocolate, spice, and topped off with a decadent cream cheese sauce.

Yes, I went there. And I brought my 'Egg Nog' with me.

I wanted this blondie to have more of a holiday twist, so I infused with the flavors of egg nog while omitting (most of) the guilt. I am all about small indulgences, especially around the holidays...
