Once upon a time, I had a bread maker. I used it pretty often, but eventually it gave out and started to give me fits. So. It was a lazy and rainy day yesterday, and after a long 'Fall break’ weekend that was filled with plenty of fun and excitement, it was a good day to rest. I’m honestly not sure I even got out of my pajamas, and neither did my daughter. Yep, that’s just how lazy we were. This Skinny Chicken Alfredo Dip was a perfect rainy day snacky sort of dinner.

Spooky 'Monster' Tacos

Cooler weather is coming… Halloween is coming! And being as it is my most favorite holiday, I’ve got to have some fun with it. I’ll be honest in saying that these are my standard, average, run-of-the-mill tacos that I make using extra lean ground beef and just a few other notable swaps along the way.

This time of year though? I like to make them a little spooky! With a few dollops of Greek yogurt, plain Jane tacos turn into MONSTER tacos! Mauahahaha. I’m so in love with Halloween that I made these tacos whilst in the middle of a horrible back spasm. Tacos are awesome as they are. But, cute tacos always win.

We’re finally in the 80’s around here, and I can feel Fall in the air just about. It’s one of my favorite times of year. Halloween is just around the corner and pumpkin spice is featured almost anywhere you look. Bring. It. On. Sometimes, you just feel like having snacks and appetizer style things for dinner. Or maybe that's just me and my family? This weekend has been a rainy one, and I'm not about to complain about that. We've been needing the rain and the cool off from the blaring Texas sun. Even so! With being stuck indoors and games and movies being the fun of the weekend, I thought it would be perfect for an appetizer night.

For whatever reason, rain always leaves me craving Mexican food. Namely enchiladas. That's why I went with this Skinny Green Chile Chicken Enchilada Dip as part of our rainy day spread.
