Baking can be hard. Baking can be complicated. Baking can be exhausting. It’s no secret that baking isn’t my favorite thing to do. It intimidates and scares me a lot. Which is why I’m forcing myself to do a whole lot more of it. I guess you could say that I’m overcoming my fear one cake at a time.

Once upon a time, I had a bread maker. I used it pretty often, but eventually it gave out and started to give me fits. So. It was a lazy and rainy day yesterday, and after a long 'Fall break’ weekend that was filled with plenty of fun and excitement, it was a good day to rest. Spooky 'Monster' Tacos

Cooler weather is coming… Halloween is coming! And being as it is my most favorite holiday, I’ve got to have some fun with it. I’ll be honest in saying that these are my standard, average, run-of-the-mill tacos that I make using extra lean ground beef and just a few other notable swaps along the way.

This time of year though? I like to make them a little spooky! With a few dollops of Greek yogurt, plain Jane tacos turn into MONSTER tacos! Mauahahaha. I’m so in love with Halloween that I made these tacos whilst in the middle of a horrible back spasm. Tacos are awesome as they are. But, cute tacos always win.
