Lightened Up Frey Pie (Game of Thrones)

As most of the world knows, the premier of the Game of Thrones TV series was yesterday. We’ve only got 5 more (lengthy) episodes left. In this house, we were celebrating with official Game of Thrones beer and also this DELICIOUS Frey Pie. Don’t worry, there’s no people baked into this pie, but it is a fun nod to the popular series and what happens when you cross Arya Stark.

This pie reminds me a lot of a traditional pot pie. One of the main differences here though is the meat that is used is ground instead of the usual shredded or cubed. It’s also loaded up with plenty of veggies. Namely mushrooms, carrots, and of course potatoes. It’s a hearty pie if ever there was one. We’ve got to survive the longer winter after all, right?…

Skinny Pesto & Ricotta Stuffed Shells

Easy-peasy weeknight meals have been the name of the game lately. And for more than one reason too! With my house a little more full than usual, the last two and a half months of school upon us, and birthday season on the horizon… it’s all I can do to stay above water anymore! These Skinny Pesto & Ricotta Stuffed Shells are made with just a handful of ingredients and couldn’t be more easy to make.

Just because they’re simple, doesn’t mean they’re lacking flavor either. Oh-no. Not these shells. As we’re coming into Spring, we’re coming into fresh basil a plenty. We’ve all made our New Year’s resolutions and now it’s time to continue sticking to them! This year, as with any year, my goal is to continue eating better and more health conscious. Eating ‘right’ can come in a lot of forms, and for me one way to do that this year is to start eating more ethically and simply.

It’s time to get cheesy! Cheese is, and always has been, my achilles’ heal. If there was one food that I could never manage to give up for just about any reason, it would be cheese. I even have a collection of recipes that is strictly devoted to cheesy eats and treats. Yep. My love for cheese goes far.

I’ve made healthier versions of actual ‘macaroni’ and cheese before, but I wanted to try something a little different since I had a giant spaghetti squash on hand that needed to be used up! Rustica Salad

Well, I guess I spoke too soon about the weather cooling off. It’s been cooler, yes… but we’ve still gotten well up into the 80’s for a couple of days this week. It’s been nice for the most part, crips mornings, warm days, and cool evenings to follow. And while I’m completely set on Fall and Winter meals now, I still needed to toss in a light salad into the mix this week.

I’m calling this the ‘rustica salad’ because that’s the name of the salad that I got the idea for this one from. Of course, I had to put my own spin on it with a homemade dressing and plenty of toppings. The homemade Skinny Balsamic Vinaigrette is one of my favorites. I make a double or triple batch of it up at a time and keep it on hand in the fridge quite often…
