Simple Snack & Travel Boxes

The third and last box is the veggie snack box, which is full of fresh veggies including carrots, tomatoes, sugar snap peas, and zucchini. That’s all paired with a hummus. I used a local sunflower seed hummus, because it’s one of my new obsessions.Well, a lot of traveling happened this weekend and being as I’m trying to eat a more consciously while traveling, I thought I would try my hand at some travel-friendly snack boxes! I wanted to make sure that these snack boxes were simple and easy to put together while being gluten-free, soy-free, and vegetarian too!

BLT Breakfast Bowl

Who doesn’t like a good BLT? Bacon makes just about everything better. Even breakfast! This Breakfast BLT Bowl is one of the quickest, easiest, and most delicious breakfasts that I’ve had in a while. Again, I’ve still got leftover eggs in my fridge (I’m down to just two now!) and I’m finding any excuse and way possible to use them up.

Being as I’m keeping things simple lately in the kitchen, and knowing how basic and easy a BLT is, I thought why not make a BLT into something for breakfast? And why stop there? Let’s turn it into a breakfast bowl at that!

Simple Wasa Cracker Snack

My fridge, just like most fridges right now, is stocked full of hard boiled bright colored eggs. And no matter how prepared any of us are for it… we always always have leftovers that we just don’t know what to do with. Thankfully, I was hungry this morning and was forced to rummage through the kitchen to put together some sense of a breakfast/brunch/lunch bite for myself.

Nordic Lunch Box

Sometimes simple is the best. This light little lunch is Nordic inspired. It’s easy-peasy with just a few clean ingredients; making it perfect for meal prepping and making ahead for the week! The original ‘boxed lunch’ that I got the inspiration for this lunch box for was made with a smoked salmon. I’m not a seafood eater though, and with St. Patrick’s day just around the corner, I thought deli sliced corned beef would be the next best option!

The fun thing about this lunch is that you can do with it as you please. Pile it all onto the crackers for one delicious mixed bite. Or keep it all separate and enjoy as a finger-food grab-and-go lunch…

'Everything' Egg Bites

It’s just been an EVERYTHING kind of week so far. You know? Everything Deviled Eggs. Everything Pigs in a Blanket. And now… Everything Egg Bites!

Sort of like with the Everything Deviled Eggs the other day, I added a touch of cream cheese to the egg bites this time to give that subtle taste and richness that one would get with an everything bagel with cream cheese.

I also put some bacon in there because…everything is better with bacon! And there’s just enough ‘Everything’ seasoning in there to give the flavor without overpowering everything else…
