Alright, well this isn’t -exactly a recipe, but more of a ‘how-to’ sort of thing. So, feel free to create your sandwich with whatever meats and cheeses your kids enjoy. Mine? She’s all about turkey, ham, and on occasion now, cheese too! Since we’re sort of in the midst of a ‘under the sea’ sort of themed week of summer, and we’re not seafood eaters, I thought I’d create a cute little sandwich.

Crab-free.

As it turns out, this sweet little guy would be great for any ocean, sea, or water themed party too. Thinking back, he probably would have fit right into my daughter’s ‘pirates and mermaid’ birthday a few years back now…

Rainbow Wrap Lunch Box

It’s getting hot here in Texas, and I don’t know about the rest of you but I could use something to cool me off by the time lunch rolls around. Even though we’re keeping things as simple as possible during the summer months, there’s still a lot of out-and-about happening. (The summer months are when the vast majority of our family birthdays are - so we’re all over the place celebrating!)

With all that’s going on around me, I like to have my lunch prepared and ready to go so that I can grab-and-go on my way out the door to whatever we might be off to. And since we’re in between our themed summer weeks of kids cooking/baking and fantasy, I thought this Rainbow Wrap Lunch Box would be the perfect fit…

Lightened Up Frey Pie (Game of Thrones)

As most of the world knows, the premier of the Game of Thrones TV series was yesterday. We’ve only got 5 more (lengthy) episodes left. In this house, we were celebrating with official Game of Thrones beer and also this DELICIOUS Frey Pie. Don’t worry, there’s no people baked into this pie, but it is a fun nod to the popular series and what happens when you cross Arya Stark.

This pie reminds me a lot of a traditional pot pie. One of the main differences here though is the meat that is used is ground instead of the usual shredded or cubed. It’s also loaded up with plenty of veggies. Namely mushrooms, carrots, and of course potatoes. It’s a hearty pie if ever there was one. We’ve got to survive the longer winter after all, right?…

Italian Lunch Box

I was sort of slightly tasked with coming up with some fun and easy lunch(able) ideas recently. It seems like breakfast is pretty easy, dinner is almost always planned, it’s lunch that most people seem to have the greatest trouble with. I know that if I make up a few little lunch boxes ahead of time, that I’m a lot more likely to eat those, rather than going without or eating something I really shouldn’t.

For me, I like light lunches. Snackable lunches. Something finger-friendly that I can nom on while working at my desk. Right? Well, this Italian Lunch Box is just that! I made four of these boxes up in the matter for just a few minutes and they’re full of fun little bits that are as versatile as they are delicious!…

Like I said, when I got my hands on that ‘everything’ seasoning, I instantly made a lot of plans of things to do with it! These 'Everything' Pigs in a Blanket where actually one of the very first things I wanted to make. So, here we go!

Pigs in a Blanket are always a fun and easy appetizer, but the ‘everything’ seasoning on them makes them… dare I say it… even better! Yep, that’s right! With just three ingredients, and a few minutes, you can have one hell of a delicious finger-food…

Skinny Leftover Turkey & Mushroom Pot Pie

Can you believe it…? I STILL have meat in my freezer that’s leftover from Christmas, y’all! The turkey has now OFFICIALLY been all used up. (Though there is still plenty of ham socked away. - Someone buy me a deep freezer please and stop this madness!) With all this meat still taking over my freezer, I’m still working on coming up with delicious ways to use it all up.

So far… it’s been in a quiche, which is one of my favorite ways to use up leftovers. Another fun way is… pot pie! Even though I’m a southern girl, I don’t think I ever had a homemade pot pie. And now that I’m an adult and sticking with this healthier lifestyle, this Skinny Leftover Turkey & Mushroom Pot Pie is as close as we’re going to get!…
