All you busy parents out there… this one's for you! And your kids too, of course! I don’t know about you but as an animal lover, my little one loves her cartoons and PAW Patrol has always been at the top of her list of favorites. So, when I saw these PAW Patrol inspired snack cheeses at my local HEB I knew that I had to get them and do something fun with them for snack time!
When I was little, two of my favorite snacks were cheese sticks and pizza bites. So, I thought to myself… why not both? And you know what? Let’s make them crazy easy and simple too. With literally just a handful of ingredients and a quick bake to perfection. The best part? They have the playful look of a rawhide dog bone! PAW Patrol, here we come.
Melon Caprese Skewers
It’s hot.
While I’m still absolutely refusing to turn my oven on right now, I still need to find creative things to eat without heating up the entire house. These Melon Caprese Skewers are a light and fun twist on a cypress.
Caprese salad is usually made with tomatoes, fresh mozzarella, and maybe some balsamic. Today though, I’m putting the salad on a skewer and using cantaloup instead of tomato. I know, sounds a little wacky, right? Well, I promise you that it’s a very very good combination…

If you’re looking for a light and quick salad to make this summer, then look no further! This ‘tomocado salad’ is as quick and easy to make as they come. What’s tomocado? Tomatoes. Mozzarella. And Avocado. Get it? To-Mo-Cado!
What makes this Tomocado Salad even better is that it’s naturally low carb and gluten free. Plus, I mean… who doesn’t want to gorge on cheese and avocado? I should note too that I’m using the term ‘salad’ here pretty loosely since there isn’t actually any lettuce involved. It’s more of a salad in the sense of that it’s a combination of cold fruits/veggies along with some cheese and herbs…

To go along with my Skinny Whipped Feta Dip from yesterday, I decided to make a beautiful plate of Spring veggies! The plate is half Spring inspired and half Mediterranean inspired to go along with the feta dip. Along with the other disable bits, there’s some olives and capers on the plate too.
The plate of Crudités starts off with the Skinny Whipped Feta Dip. Then there’s plenty of slices zucchini, salami, tomatoes, fresh mozzarella, berries, and of course… olives and capers! I’ve made my fair share of plates, trays, and other sorts of sharable appetizers before. But, I have to say that this Spring Vegetable Crudités Plate is well balanced and one of my new faves!…
