Homemade Almond Milk

A few years ago, I started to switch more and move over to almond milk. My kiddo isn’t (and has never been) a big fan of milk. Not in her cereal. Not with cookies. Nope. None of that. So with that I began getting almond milk for myself unless there was a specific recipe for which almond milk just wouldn’t work. And trust me when I say that there are some out there.

The problem is that I’m generally the only one in the house that uses any sort of milk at all for anything. And you can’t really buy a small container of almond milk unless it’s some over priced organic or local product. If I buy a half gallon of almond milk the majority of it goes to waste. My solution? Make my own damn almond milk…

As we’re getting closer and closer to Halloween (my favorite holiday), I’m playing more and more with candies and chocolates of all kinds this year! While I’ve made a few candies in the past, it’s usually something that I try and steer clear of. Why? Well, candy making scares my pants off!

Cornbread & Chicken Nugget Cupcakes with Mashed Potato Frosting

Back-to-school is on the horizon, and being the mom of an ever growing little, I've found that there's a few tricks to getting kids to eat their dinner sometimes! One of the best ways is to make it fun. Yes, food can be fun and these Cornbread & Chicken Nugget Cupcakes are just that! Fun. It's a savory twist on a cupcake; letting the kids eat with their eyes first.

The base of the cupcake is made with a quick and easy cornbread muffin that's made by mixing together a self-rising cornmeal, cheese, and a creamed corn. Strawberry Grain-Free Granola (Gluten-Free too!)

Holy. Moly. We are well into the 90 degree days here in Austin Texas and summer is nipping at our heels. The house is stifling in the days, and even while the mornings are still decently cool, I am over here preparing for the onslaught that is about to befall us with raging 100 degree + days.

As the weather turns warmer, I'm starting to lean towards the cooler and more refreshing bites for breakfast. Cereals. Yogurts. Fruits. My only problem is that all the good granolas out there cost a pretty penny. That's why I've been opting to make my own. Plus, I love being able to make my own unique flavors and there is nothing more Summery to me than strawberries. Here in Texas, the strawberry season starts in Spring and seems to go almost all Summer long. We even have a festival for strawberries here in the summer! What's up Poteet Strawberry Festival!…

Roasted Beet Hummus

There isn't much that's prettier than this hummus right here. I mean... look at it. It's perfectly gorgeous. Roasted beets make for the beautiful fuschia pink hue in this hummus that is sure stand out any time of year but especially around Valentine's Day.
