Air Fryer Breakfast Egg Rolls

Who doesn’t like a fun take on breakfast? These Air Fryer Breakfast Egg Rolls are all your favorite parts of breakfast rolled up and air fried to perfection. Bacon, sausage, egg, cheese - like I said, all the things you know and love about breakfast in one bite! I’ve made something similar to these before, but it included some gravy for dipping and I really wanted these to be able to stand alone as well as be more of a grab-and-go thing.

These end up super crispy and actually reheat pretty well if you make them ahead of time. You can just pop them in a toaster oven to reheat and eat. If you have any leftover that is.

I lightened these up by firstly using the air fryer rather than actually frying them. I also swapped in some egg whites and cottage cheese for a few of the whole eggs. Cottage cheese might sound a little scary, but I promise you won’t know it’s there AND it actually helps to make the eggs more light and fluffy when cooked!

Other than that, I used a low sodium center cut bacon and reduced fat cheddar. You can’t go wrong with either since you get the same great taste with a lot less calories on the back end which means you get more bang for your buck.

Crispy tasty egg rolls loaded up with all the breakfast goodness and cooked in the air fryer for a hot, quick, and delicious start to the day!

Ingredients

  • 6 Egg Roll Wrappers
  • 3 Whole Large Eggs
  • 3 Egg Whites
  • 3 Tbsp. Low Fat Cottage Cheese
  • 8 Oz. Lean Breakfast Sausage, Cooked
  • 6 Slices Low Sodium Center Cut Bacon, Cooked & Crumbled
  • 6 Tbsp. Shredded Reduced Fat Cheddar Cheese

Instructions

  1. Lay out egg roll wrappers and cook the 3 Whole Large Eggs, 3 Egg Whites, and 3 Tbsp. Low Fat Cottage Cheese to scramble. Season the eggs with salt & pepper to taste.
  2. Divide the scrambled egg evenly among the egg roll wrappers.
  3. Top each with the cooked sausage divided evenly, 1 slice of the cooked bacon, and 1 Tbsp. of the shredded cheddar.
  4. Roll each up like a burrito and place in the air fryer basket.
  5. Give them a light spritz of non-stick cooking spray and set the air fryer to cook for 5 minutes on 400 temperature.
  6. Flip over and cook for another 5 minutes or until browned and crispy.
  7. Once done, carefully remove from the air fryer basket and enjoy right away!
