Ingredients
- 2 Boneless Skinless Chicken Breast
- 1 Tsp. Dill Pickle Seasoning
- 7 Oz. Low Fat Cottage Cheese
- 4 Tbsp. Pickle Salsa
- 1 Oz. Fat Free Greek Yogurt
- 2 Tbsp. Dill Real Yogurt Salad Dressing (Or Ranch)
- Salt & Pepper to Taste
- 6 Low Carb 10" Flour Tortillas
- 12 Tbsp. Shredded Dill Havarti Cheese
Instructions
- Place 1 1/2 C. water in the base of an instant pot. Lower the trivet into the instant pot and place the 2 Boneless Skinless Chicken Breast over it. Top the chicken with the 1 Tsp. Dill Pickle Seasoning, secure the lid, set the steam valve to 'sealed' and set to cook on Manual for 45 minutes. Allow the pressure to drop naturally or do a quick release.
- Once done, remove the chicken and shred between two forks, set aside.
- Put the 7 Oz. Low Fat Cottage Cheese, 4 Tbsp. Pickle Salsa, 1 Oz. Fat Free Greek Yogurt, 2 Tbsp. Dill Real Yogurt Salad Dressing (Or Ranch), and Salt & Pepper to Taste into a blender, food processor, or the cup of an immersion blender. Blend until smooth.
- Divide the saucy mixture evenly between the 6 Low Carb 10" Flour Tortillas. Top the sauce with 2 Tbsp. Shredded Dill Havarti Cheese per wrap. Divide the cooked and shredded chicken evenly among wraps.
- Roll each one up like a burrito.
- Cover and store in the fridge or freezer until ready to enjoy.
