Made with rolled oats, Greek yogurt, and a touch of maple syrup, it’s an easy-to-make dish that will give you a slice of dessert happiness without the sugar overload. Top it with a sprinkle of cinnamon or a dollop of Greek yogurt for an extra boost of flavor. This Cherry Cheesecake Baked Oatmeal is not just breakfast; it’s a warm hug in a bowl!

I topped mine with a little drizzle of a bourbon maple syrup that I have and it was a hearty and absolutely delicious breakfast to have on hand this week. The last time I made a blueberry version of this, I blended the yogurt into the oats, but this time I dropped it on top and I liked it a whole lot more this way.

Ingredients

  • 200 G. Rolled Oats
  • 2 Whole Ripe Bananas
  • 60 G. Vanilla Protein Powder
  • 420 Ml. Unsweetened Almond Milk
  • 1 Tsp. Baking Powder
  • 6 Tbsp. Fat Free Cherry or Vanilla Greek Yogurt
  • 120 G. Frozen Cherries
  • 1 Tsp. Maple Syrup

Instructions

  1. Preheat the oven to 350 degrees F. and lightly coat the inside of a 9x9" or 8x8" baking dish with non-stick baking spray; set aside.
  2. Mix together the 200 G. Rolled Oats, 2 Whole Ripe Bananas, 60 G. Vanilla Protein Powder, 420 Ml. Unsweetened Almond Milk, and 1 Tsp. Baking Powder.
  3. Pour the mixture into the prepared baking dish. (I used my immersion blender to blend the oats a bit because I like a smoother baked oatmeal.)
  4. Thaw and warm the 120 G. Frozen Cherries with the 1 Tsp. Maple Syrup in a small microwave bowl then spoon over the top of the oat mixture.
  5. Drop the 6 Tbsp. Fat Free Cherry or Vanilla Greek Yogurt around over the top.
  6. Place into the oven to bake for about 45 minutes or until the edges are browned and the middle is set.
  7. Once done, remove from the oven and allow to cool slightly before cutting into 6 pieces to enjoy right away or store in the fridge to easy breakfast through the week!
