Buffalo Chicken Nachos

It won’t be long now and it will be football season. I should know, my daughter is a cheerleader this year! I’m always down for gameday food, but I think this year will be that much more special. And nothing says gameday or tailgating quite like buffalo chicken. Let me just say too, these easy Buffalo Chicken Nachos are where it’s at.

I found some gluten free lime multi grain chips at the store, and just knew they would go perfectly well with some sort of buffalo chicken goodness. And here we are! These nachos are a little Tex-Mex mixed with just a touch of an American favorite; buffalo chicken.

These lime chips are topped of with a buffalo chicken mix, plenty of cheese, and lots of fresh pico and pickled jalapeños. They are SO yummy. The recipe makes for a whole tray of nachos too. Meaning you’ll have plenty for the whole family. I’ve made buffalo chicken nachos before, but not quite like these.

These definitely have more of a Tex-Mex flare with the pico and lime chips which definitely help to cut through the richness of the cheese and the spice of the buffalo sauce.

Buffalo Chicken Nachos

Shredded buffalo chicken atop lime tortilla chips and covered in cheesy goodness!

Ingredients

  • 1 Lb. Chicken Breast, Cooked & Shredded
  • 1/3 C. Buffalo Sauce
  • 1/4 C. Greek Yogurt
  • 1 C. Shredded Cheddar
  • 1 C. Shredded Mozzarella
  • 1 (8.25 Oz.) Bag Lime Tortilla Chips
  • 1/4 C. Fresh Pico
  • 1/4 C. Pickled Jalapeños
  • 2 Tbsp. Fresh Chopped Cilantro

Instructions

  1. Place the shredded chicken into a bowl and mix together with 1/3 C. buffalo sauce and 1/4 C. greek yogurt.
  2. Preheat the oven to 375 degrees F. and cover a baking sheet with foil or a silicone baking mat for easy clean up.
  3. Layer the chips out on the prepared baking sheet.
  4. Top the chips with the chicken.
  5. Sprinkle the 1 C. cheddar and 1 C. mozzarella over the chicken.
  6. Place in the oven to bake for 10 minutes.
  7. Once done, remove and top with 1/4 C. fresh pico, 1/4 C. jalapeños, and 2 Tbsp. fresh cilantro.
  8. Enjoy right away!
