A fluffy, oven-baked pancake that rises gloriously, forming a delicate golden bowl. As you take your first bite, you'll be greeted by the tangy essence of fresh lemons, lending a refreshing twist to the classic Dutch Baby.

Ingredients

  • 4 Whole Large Eggs
  • 1/2 C. Unsweetened Almond Milk
  • 1/2 C. Flour
  • 3 Tbsp. Sugar
  • 2 Tbsp. Melted Butter
  • 1 Tsp. Vanilla
  • 1/4 Tsp. Salt
  • Zest of 1 Lemon
  • 2 Tbsp. Butter
  • 1 C. Fresh Blueberries

Instructions

  1. Preheat the oven to 450 degrees F. and lightly coat the inside of a large oven safe skillet with non-stick spray; set aside.
  2. Place the 4 Whole Large Eggs, 1/2 C. Unsweetened Almond Milk, 1/2 C. Flour, 3 Tbsp. Sugar, 2 Tbsp. Melted Butter, 1 Tsp. Vanilla, 1/4 Tsp. Salt, and Zest of 1 Lemon into a food processor or blender and puree down; set aside.
  3. Melt the 2 Tbsp. Butter over medium-high heat then toss in the 1 C. Fresh Blueberries to cook for few seconds before removing from the heat.
  4. Pour in the batter and place in the oven to bake for 15-20 minutes or until puffed up and golden brown.
  5. Once done, remove from the oven and divide evenly to enjoy right away.
