I drizzled mine with some chocolate sauce and a dusting of pumpkin spice, but really some vanilla ice cream, whipped cream, or even caramel would be good here too! But, none of it is really needed other than for aesthetics!

This Pumpkin Lava Cake is super easy to make and takes little time at all for a fun little Fall inspired dessert that everyone is sure to love.

Indulge in the warm and gooey goodness of Pumpkin Lava Cake, a delightful twist on a classic dessert! This guilt-free treat combines the rich, comforting flavors of pumpkin and spices with a molten gooey pumpkin center that oozes out with every forkful.

Ingredients

  • 3 Tbsp. Creamy Reduced Fat Peanut Butter
  • 1 Tbsp. Coconut Oil
  • 1 Whole Large Egg
  • 1 Egg Yolk
  • 1/4 C. Pumpkin Puree
  • 1/4 C. Natural Sweetener (Like Stevia.)
  • 1/4 Tsp. Vanilla Extract
  • Pinch of Salt
  • 3 1/2 Tbsp. Flour
  • 3/4 Tsp. Pumpkin Pie Spice

Instructions

  1. Preheat the oven to 400 degrees F. and lightly coat the inside of two ramekins with non-stick baking spray and dust with flour.
  2. Place the 3 Tbsp. Creamy Reduced Fat Peanut Butter and 1 Tbsp. Coconut Oil into a small bowl together and place in the microwave for about 15 seconds to melt. Stir together.
  3. In another bowl, beat together the 1 Whole Large Egg, 1 Egg Yolk, 1/4 C. Pumpkin Puree, 1/4 C. Sugar, 1/4 Tsp. Vanilla Extract, and Pinch of Salt.
  4. Fold the peanut butter mixture into the pumpkin mixture.
  5. Stir in the 3 1/2 Tbsp. Flour and 3/4 Tsp. Pumpkin Pie Spice.
  6. Divide the mixture evenly between the two ramekins.
  7. Place in the oven to bake for 13-15 minutes.
  8. Once done, allow to cool slightly before running a knife around the inside of the ramekins to loosen the cakes.
  9. Flip a plate over the top of each ramekin and gently turn over to transfer the lava cake from ramekin to plate.
  10. Top as desired and serve right away to enjoy!
