Skinny Rainbow Unicorn Donuts

Unicorn fever is spreading, and I'm loving every second of it. Now there's even chatter about Mermaids and Dragons too! However, nothing is quite as whimsical or magical as the mysterious Unicorn. Except maybe these donuts. They are perfectly colorful and special in every way; from their fun vibrant colors to their lightened up and magically guilt-free batter. These donuts are sure to be a spectacular rainbow hit!

My daughter's face when she got home from school and saw these on the counter waiting for her, was pretty priceless. That says it all right there. There is not much that will put a smile on anyone's face like the magic of Unicorns will. Seriously. How can you look at these and not smile? Go on. Try it. I dare you!

What's even better about these donuts is that I made them using one of my new favorites; all natural food coloring and all natural sprinkles. Why? Well, while they might be a bit more spendy, I feel like they are worth it. The colors come out nearly as bright and definitely as beautiful if you work with them a bit. But, you can use whatever coloring/sprinkles suits you here with these. I did add a few silver edible pearls and some 'magic pearl dust' to give them that extra sparkly glittery appeal.

These donuts are based off my Skinny Vanilla Bean Donuts from a while back. I basically swapped the vanilla bean for the coloring and added sprinkles. And of course, I had to use my extra special heart shaped donut pan, because... it's almost as adorable as a Unicorn. Almost.

Now, I will say that these donuts are dense and more 'cake' like. I mean... let's face it. They're baked, not fried like typical 'donut store' donuts. Nope. These are better in my opinion. They're better because their fresh and warm and baked to perfection. Besides, I hardly think that the standard donut store will have Unicorn donuts on their menu.

The Skinny:
Servings: 6 • Size: 1 Donut • Calories: 164.5 • Fat: 2.4 g • Saturated Fat: 0.2 • Carb: 31.3 g • Fiber: 0.7 g • Protein: 4.7 g • Sugar: 15 g • Sodium: 123.7 mg

Ingredients:
Donuts:
1/2 C. Whole Wheat White Flour
1/2 C. All-Purpose Flour
2 Tbsp. Sugar
2 Tbsp. Natural Sweetener
1 Tsp. Baking Powder
1/4 Tsp. Ground Cinnamon
1 Large Egg
1/4 C. Plain Fat Free Greek Yogurt
1/4 C. Fat Free Milk
1 1/2 Tbsp. Light Butter, Softened
1 Tsp. Vanilla Extract
All Natural Food Coloring
All Natural Sprinkles

Vanilla Glaze:
1/2 C. Powdered Sugar
1 Tbsp. Fat Free Milk
1/2 Tsp. Vanilla Extract

Directions:
Preheat the oven to 325 degrees F. and lightly spray a donut pan with non-stick cooking spray.

Combine the 1/2 C. Whole Wheat White Flour, 1/2 C. All-Purpose Flour, 2 Tbsp. Sugar, 2 Tbsp. Natural Sweetener, 1 Tsp. Baking Powder, and 1/4 Tsp. Ground Cinnamon into a large bowl until well blended. Set aside.

In a medium bowl, whisk together the 1 Large Egg, 1/4 C. Plain Fat Free Greek Yogurt, 1/4 C. Fat Free Milk, 1 1/2 Tbsp. Light Butter, and 1 Tsp. Vanilla Extract until smooth and creamy. 

Add the wet ingredients in with the dry and combine just until everything is fully incorporated. 

Divide the batter evenly among a few bowls and add in a few drops of food coloring; stir just until blended evenly.

Spoon or pipe the dough into the prepared donut pan, dividing evenly among the sections.

I put my batter into a ziplock bags, sealed them, cut the ends off and used that to pipe into my pan. 

Use a toothpick to swirl the colors together and top with a few sprinkles if desired.

Place the pan into the oven and bake for 10-15 minutes, or until the donuts are cooked through. 

The donuts will not turn golden brown, but should 'spring back' to the touch when done. 

In the mean time, whisk 1/2 C. Powdered Sugar, 1 Tbsp. Fat Free Milk and 1/2 Tsp. Vanilla Extract together for the glaze and set aside.

Once done, remove the donuts from the oven and allow to cool on a wire rack.

When the donuts are cool enough to handle, dip them face-down into the glaze and set on a wire rack; sprinkle those bad boys up right away and let them set. Maybe 5 minutes or so.

Enjoy! One or... two.
