Winter Citrus & Honey Power Breakfast

I guess you could say that this is one bee-utiful breakfast. Ba-dum-psshh! Okay. Seriously though? Let's talk about this power breakfast right here. It's winter right now and there's a plethora of fresh winter citrus going around. Right now is one of the few times of year that you'll find blood oranges out and about.

Don't be scared either. They're called blood oranges because of their usual deep red splotched on their peel and their rich ruby red color of fruit inside. If you've seen or had blood orange juice before, you know what I mean. Along with blood oranges, the grapefruits are HUGE right now too. Just the way I like 'em. Big and juicy.

Instantly when I got my hands on some blood oranges and grapefruit this week, I knew I would pair it with a piece of honeycomb. WHAT? I know. Yes. You CAN eat honeycomb and to tell the truth, it's pretty friggin' delicious. It's got a sweet taste (obviously), but it's different from plain jane honey. Maybe more potent or strong and even a little fruity?

The texture is on point too. I was honestly a little scared of trying it at first, just because, you know... eating a honeycomb just sounds iffy. But! I was thoroughly impressed and can honestly say that there is nothing to be scared of.

To soften the acid of the citrus, I added some sliced banana and cool and creamy Greek yogurt under it all. Plus, this was a great opportunity to use up some more of my homemade grain-free granola. The bee pollen and local honey was another good add.

I'm all about that local honey too. Especially, during allergy season, which is, unfortunately, every season here in central Texas! Local honey supposedly helps with those allergies since raw honey contains pollen and a local raw honey will contain pollen in your area - helping you build up a tolerance to those allergens. It's a theory, but one I personally trust.

The Skinny:
Servings: 4 • Size: About 1 1/2 Cup • Calories: 343 • Fat: 12 g • Saturated Fat: 4 g • Carb: 53 g • Fiber: 6 g • Protein: 11 g • Sugar: 35 g • Sodium: 42 mg

Ingredients:
1/4 C. Plain Greek Yogurt
1/4 C. Homemade or Grain-Free Granola
1/4 Grapefruit, Peeled & Segmented
1/4 Blood Orange, Peeled & Segmented
1/2 Banana, Peeled & Sliced
Slice of Honeycomb
Drizzle of Local Honey
Sprinkle of Bee Pollen

Directions:

Place the 1/4 C. Plain Greek Yogurt and 1/4 C. Homemade or Grain-Free Granola together on a bowl or plate.

Arrange the 1/4 Grapefruit, 1/4 Blood Orange, and 1/2 Banana over the yogurt and granola.

Finally, add your Slice of Honeycomb, Drizzle of Local Honey, and a Sprinkle of Bee Pollen!

Enjoy right away.
