Packed with vibrant veggies and drizzled with a zesty dressing, it's a convenient option for busy days when you need a guilt-free lunch or dinner on the go. Bonus: It's as delicious as it is healthy!

Ingredients

  • 2 Zucchini, Spiraled or Sliced Thinly
  • 2 Oz. Microgreens/Sprouts (I used Wasabi Micros)
  • 8 Oz. Tofu Crumbles
  • 10 Oz. Steamed Shelled Edamame
  • 1/4 Red Onion, Sliced Thin
  • 1 Small Avocado, Cubed
  • 2 Oz. Whipped Cream Cheese
  • Drizzle Light Mayonnaise
  • Drizzle Soy Sauce
  • Drizzle Sriracha
  • Optional Toppings: Sesame Seeds, Wasabi Peas/Mix

Instructions

  1. Layer the Ingredients: In a meal prep jar, start with the 2 Spiraled Zucchini at the bottom. Add the 2 Oz. Microgreens/Sprouts, 8 Oz. Tofu Crumbles, 10 Oz. Steamed Shelled Edamame, 1/4 Red Onion, and 1 Small Avocado all divided evenly among the containers.
  2. When ready to eat, Top with 2 Oz. Whipped Cream Cheese divided evenly, along with a, Drizzle Light Mayonnaise, Drizzle Soy Sauce, Drizzle Sriracha and any Optional Toppings like Sesame Seeds, Wasabi Peas/Mix!
  3. Shake It Up: When you’re ready to eat, simply shake the jar to combine all the ingredients with the dressing. The vibrant colors will make you swoon!
  4. Serve and Enjoy: Pour the salad into a bowl or enjoy it straight from the jar. Feel free to top with even more sesame seeds or chopped nuts for added crunch.
