This Easy Keto Mexican Skillet is not only bursting with flavor but also quick enough to whip up on a busy night.

Ingredients

  • 1 Lb. Extra Lean Ground Beef
  • 1 White Onion, Diced
  • 1 Bell Pepper, Diced
  • 1 (10 Oz.) Can Rotel (Diced Tomatoes & Green Chiles)
  • 1 (12 Oz.) Bag Frozen Riced Cauliflower
  • 3 Tbsp. Salt-Free Taco Seasoning
  • 1 C. Reduced Fat Shredded Cheese
  • Salt & Pepper to Taste

Instructions

  1. Lightly coat the inside of a large skillet with non-stick spray and heat it over medium-high heat.
  2. Add in the 1 Lb. Extra Lean Ground Beef and cook to brown.
  3. Stir in the 1 White Onion and 1 Bell Pepper and continue to cook for another few minutes until the onions are starting to become tender.
  4. Add the 1 (14.5 Oz.) Can Rotel (Diced Tomatoes & Green Chiles), 1 (12 Oz.) Bag Frozen Riced Cauliflower, and 3 Tbsp. Salt-Free Taco Seasoning to the skillet and continue to cook until heated through.
  5. Remove from heat and season with salt and pepper to taste before stirring in the 1 C. Reduced Fat Shredded Cheese until melted.
  6. Once done, divide evenly among bowls and top with any additional cheese or green onions to enjoy right away!
