Who knew that such a delicious meal could be made with just 5 simple ingredients and 3 hours of hands-off cooking time? Well, this girl! As we’re getting closer to Summer here in Texas, I’m starting to already use my stove and oven less and less. It’s freaking HOT here already, y’all! Any excuse that I can find to use my crock pot or pressure cooker, is a good one.

Spring Vegetable Crudités Plate

To go along with my Skinny Whipped Feta Dip from yesterday, I decided to make a beautiful plate of Spring veggies! The plate is half Spring inspired and half Mediterranean inspired to go along with the feta dip. Along with the other disable bits, there’s some olives and capers on the plate too.

The plate of Crudités starts off with the Skinny Whipped Feta Dip. Then there’s plenty of slices zucchini, salami, tomatoes, fresh mozzarella, berries, and of course… olives and capers! I’ve made my fair share of plates, trays, and other sorts of sharable appetizers before. But, I have to say that this Spring Vegetable Crudités Plate is well balanced and one of my new faves!…

'Everything' Egg Bites

It’s just been an EVERYTHING kind of week so far. You know? Everything Deviled Eggs. Everything Pigs in a Blanket. And now… Everything Egg Bites!

Sort of like with the Everything Deviled Eggs the other day, I added a touch of cream cheese to the egg bites this time to give that subtle taste and richness that one would get with an everything bagel with cream cheese.

I also put some bacon in there because…everything is better with bacon! And there’s just enough ‘Everything’ seasoning in there to give the flavor without overpowering everything else…

The BIG football game is upon us THIS weekend, y’all! My family and I are already busy making gamely spread plans. I decided though, that I need to have a practice run this weekend though to test out this new recipe. And it worked out so well that I just HAD to share it right away. I mean… how can you go wrong with a 3 ingredient wonder?

How can you go wrong with stuffed Jalapeños? Or cheese? Or bacon? The simple answer is… you can’t! These Jalapeños aren’t stuffed with any cheese though. Nope! They’re stuffed with none other than pimento cheese. Don’t know what that is? Well, you should! Pimento cheese is a southern staple that’s made with shredded cheese, pimentos, and a few other things. I’ve got to be honest. I’ve been skipping out on breakfast for a while now. With school starting back up after the winter break and a terrible head cold running rampant through the house… There just hasn’t been enough time in the day to fuss with breakfast. And the whole point of breakfast is just that… to break-the-fast of the night of sleeping.

They don’t say that breakfast is the most important meal of the day for no reason. It’s there to start your day off and get you in gear for the rest of the day. Trust me when I say that being ‘hangry’ is a real thing. Finally, I made plans this week to stick to my guns and be SURE that I started my day off right with actually eating breakfast again….
