Halloween Bread

With just a few days more before it’s Halloween I wanted to make my daughter’s lunch box extra special. So, I decided to make this fun Halloween colored sandwich bread! I made it based off of my Rainbow Bread, but with a slight recolor to go along with Halloween!

I made this bread dough in my bread machine and then colored it, sandwiched it all together, rolled it up and made it into a loaf for baking. You can also make this bread without a bread machine. I only used mine for the mixing and rising aspect…

Club Sandwich

Who can say no to a traditional club sandwich? This Club Sandwich is made just a little better-for-you with a few simple swaps that keep it perfectly classic and yet guilt free! As with any club sandwich, this one starts out with sliced deli ham and turkey, and then paired with bacon, cheese, tomato and some lettuce. All on some toasted bred with a smear of light mayo.

It’s good stuff and goes well with a light salad, a cup of soup, or even some salt and vinegar kettle chips like I had. It was simple, classic, and so so good! Of course, I wouldn’t say no to some pickles on the side too…

Instant Pot Poached Eggs

It’s been a good long while since I had some eggs for breakfast and if I’m being very honest? I’ve never had a poached egg before in my life. I’ve had them just about every other way there is other than poached. So, this morning I decided to try my hand at it. However it’s summer and I’m lazy. Instant Pot to the rescue!

Oh, how many times the Instant Pot has saved me.

These eggs are cooked up in no time and require NO technical or cooking skills what-so-ever. That’s right. these poached eggs are cooked right in the pressure cooker and you can play around with the timing to get them exactly where you want them as far as yolks go…

Caprese Pasta Salad

As it’s getting hotter and hotter outside I’m craving the cold stuff. The lighter stuff. The stuff I don’t have to turn my oven on to enjoy. This Caprese Pasta Salad is just that. Get it started in the morning when it’s cool out and then finish it off in the afternoon or evening as lunch, dinner, or a side for one of the two. The pasta dish itself is based off one of my all time favorites - caprese!

I don’t make it a big secret that I am no fan of seafood. I am not now and have never been. It’s not got anything to do with an allergy or taste or texture. It is simply that I don’t want seafood in my mouth. It’s one of my many strange little quirks. That generally means that for most of my life, I’ve made seafood free alternatives, and these Tex-Mex Chicken Cakes are one of those!

Spring Vegetable Crustless Quiche

I’ve made a lot of crustless quiches in the past, and with Spring in full swing, I decided to make one that used up the bounty of veggies that Spring offers up such as spinach, mushrooms, and asparagus. Unlike some of my other quiches, I wanted this one to be the absolute start of the plate. So, I stuffed it full of veggie goodness, used more eggs, less milk, and ended up with a low calorie, high flavor dish that was perfectly suited to Spring.

I think one of my favorite things about quiche has to be that it can literally be enjoyed as a meal at any time of day; breakfast, brunch, lunch, dinner… any and all! When enjoying with breakfast or as brunch, I serve it with fresh fruit. But if it’s al lunch or dinner option, I dress it up with a soup and/or salad!…
