Skinny Irish Cream Donuts

It's been a week, y'all. I'm not even going to lie. The world has really thrown me for a loop. Good ways. Bad ways. Neither which ways. ... And, what gets you better on your feet than some good ole Irish cream? Hair of the dog anyone? St. Patrick's Day is just around the corner, so you know I'm all about that famous Irish liqueur to 'celebrate' with.

I based these Skinny Irish Cream Donuts off an older recipe for Skinny Vanilla Bean Donuts; with a few minor adjustments. The recipe still holds true for a soft, vanilla, cake donut that's just got enough of that Irish cream flavor to trickle the taste buds in just the right way. And as anyone that knows me can tell you... I'm all about donuts. So, don't take it lightly when there's one here for you! That means it's passed all of my donut tests through and through...

Skinny (2 Ingredient) Cream Cheese Rangoon

This year, we'll be doing things a little different for Christmas. Instead of our usual mass of cooking, we'll be heading out to enjoy some Asian cuisine on Christmas day. Of course, you know I'm always inspired by the goings-on around me and today is no different. With Asian food on my mind I decided that it was high time for some Cream Cheese Rangoon.

I know, I know... Generally you'll find some sort of meat inside of a rangoon, however... I'm not too big on seafood. So, I always make mine with tofu cream cheese. Sounds interesting, right? Tofu. Cream cheese. Trust me, this stuff is amazing. It looks, tastes, and feels just like traditional cream cheese (but with a lot less calories and obviously dairy free!) so I'm often using it in place of standard cream cheese. Especially if it's involving anything with an Asian flare...

Homemade Cinnamon Whipped Cream

The holidays are on our tails and I'm busy getting ready (as I'm sure we all are) by making my usual loads of cookies, cakes, cocoa and other wonderful sweet treats. 'Tis the season, am I right? Just because it's the season of feasting and over indulging, doesn't mean that you have to go overboard though! There are so many easy ways to lighten up and indulge in your favorites without feeling guilty. It's as simple as a few swaps and some common sense.

I've heard it said before that you can eat anything you want, as long as you make it yourself. Of course, that isn't entirely the mantra that I live by, I do believe in homemaking the vast majority of the things I can. One of the most easy things to make on your own, has to be whipped cream! I've been making my own whipped cream for a few years now, and I love that I can completely control the sweetness and flavor for myself...

Skinny Pumpkin Spice Cream Cheese Crepes

Last weekend my dad was here to visit for a few days, and that always means that I get spoiled on crepes. The man is basically famous for his crepe making skills, and naturally I'm always pushing him outside the box with interesting flavor ideas. We've done everything from red velvet to a more savory chive and cheese crepe. His go to combination is and has always been a plain crepe with a strawberry cream cheese filling, and trust me when I say that those are absolutely out of this world.

But... it's pumpkin season and I'm going to take full advantage of it. So, we ended up making these pumpkin spice crepes filled with a lightly sweetened cream cheese  mixture. Yum! One of my wonderful cousins is a pumpkin spice fanatic just like I am, so I know she's going to have to talk my dad into making these sometime for her too! Sick'em Sam!...

My little girl is 6 years old now and is a little eccentric. She's a lefty and as such is incredibly creative and imaginative. We all know that summer is all about cook outs and block parties. Of course, here in Texas, we have to get out there early in the day or wait until the sun is starting to set to have a more enjoyable temperature.
