Many years ago I started making my own spaghetti sauce. Don't get me wrong, jarred spaghetti sauce has it's place and time in my life too. But, when given the option, I will always prefer making my own. I've made several types and kind. Some in the crockpot, others with meatballs, this one though is easy, simple and full of tomato flavor.

Baked Eggs in a Zucchini Nest

Wakey-wakey eggs and bakey! This mornings breakfast is brought to you by, leftovers! Okay, maybe not exactly leftovers but an accumulation of things that I indeed had leftover in my fridge that went unused through the week in some way shape or form.

For instance, the original plan for the spiralized zucchini was for zoodles in a vegan Pho. The same goes for the mushrooms. I'm not entirely sure why the tomatoes were untouched, but somehow everything always works out in the end. Just like these Baked Eggs in a Zucchini Nest!...

We made it! I finally got back from our end of the summer spur of the moment vacation road trip across two states with just myself, my mom, and my little girl. It was a blast! The end of Mermaid week is upon us! I've saved the best for last with this Mermaid 'Seaweed' Wrap. There is a long history behind this wrap too! It's special to my family because it's been in the summer rotation for about 5 years now! Yep. That's just how good this wrap is. One thing I love most about it is that it's so versatile; making the perfect lunch box addition, summer lunch or even as a light dinner. It's perfectly 'meal prep' friendly and full of wholesome goodness.

I've dubbed it the 'seaweed' wrap since I like to use the bright and colorful spinach tortilla to wrap everything all up in. On the inside, I've loaded this wrap up with plenty of fun and vibrant mermaid inspired bits. The first layers are hummus and a low fat cream cheese, followed by carrots, tomatoes, spinach, and my favorite part, Chopped Eckrich Honey Cured Ham!
