Everyone should know by now that I am a cheese freak. A cheeseoholic. A cheese master. ...I guess one could even say that I'm a bit... cheesy. Buh-dum-psssh. Queso is usually my go-to cheesy wonder of amazingness, but I thought today I would change it up a bit and go with something a bit more traditional and Americanized.

What's more American than broccoli and cheese? Besides Apple Pie or Baseball. Neither of which would make for a very good cheese dip...

Spring is upon us here in Austin Texas, which for me means entertaining friends and family... and also means it's time for deviled eggs. Not just any deviled eggs though, we're talking fully loaded in a way that I never really thought of before. Mediterranean Chickpea Salad

With the schedule around my house changing up a bit recently, I've had to make some adjustments to when and how I cook. So, I've been cooking a lot less and mostly just for myself since my little one is still a rather picky eater and lately dinner time is our mommy-daughter time.

That being said, dinner time for me has included quicker, easier dishes that are either meal prepped or a one and done toss together sort of salad. Baked Beet Chips

Last week I had some beets leftover that needed to be used and decided to use them up in one of my favorite ways - as chips! Beets are really the perfect root vegetable to make chips with. They turn out crisp and crunchy while not having a completely overwhelming flavor. In fact, if you closed your eyes and ate one, you might not even know it was a beet at all!

Roasted Beet Hummus

There isn't much that's prettier than this hummus right here. I mean... look at it. It's perfectly gorgeous. Roasted beets make for the beautiful fuschia pink hue in this hummus that is sure stand out any time of year but especially around Valentine's Day.

Hummus is super easy to make, and it will save you a ton of money to make yourself too! Plus, you have complete control over what goes into it. And let's face it... It's just fun to eat pretty stuff. You eat with your eyes first...

I've been on a bit of a nut kick lately. I blame the granola that's been made and the fact that I'm trying to get a lot more healthy fats in my life right now. This. This right here? This is some magical stuff, I tell you. And a total nod to my childhood as well.

As a child (ahem and adult) I've loved ice cream. I mean... who doesn't? Two of my families favorites were Chubby Hubby and Chunky Monkey. The Chunky Monkey flavor is a banana ice cream base with pieces of chocolate and walnuts all through it. So, being as I'm so nutty right now...
