I used to be a rather picky eater. In fact, I was such a picky eater growing up that my mom and dad had to tell me that beef came from a 'beef tree' so that I would eat it. As I've gotten older, my tastes have changed. My mind has expanded. And my pallet continues to get more and more educated. That isn't to say that my mouth is snobby, just that I'm far more open to new things.

Take goat cheese for instance. I'm an avid cheese lover, and I've never met a cheese I didn't like, but I have often found myself questioning and unsure of goat cheese for some reason. Maybe I secretly deep down don't like goats? Whatever the reason, I try try try my best to stick it through, and when I do... I love goat cheese! So what's halloumi anyway? Well, it's goat cheese. And today I piled it high on this sausage and zucchini tomato sauce to make one bangin' low-carb dinner!…

Spring Chicken Soup

I may not be a spring chicken anymore, but this soup sure is! Just because it's Springtime, doesn't mean that we have to quit eating soup. Let's face it, sometimes you just want a good meal in a bowl to warm your soul, and that's what this soup is meant for! Even if it is warming up outside.

I'm going to hold onto Spring for as long as I can and go kicking and screaming into the hot blazes of another Texas summer. The, at least, 4 months of the year where my air conditioner is running constantly on full and the air outside is almost so hot that it burns your lungs when you breathe. Ughhh... No, thank you! I'll just sit here and enjoy the Spring weather while I can. Soak ever ounce of it up...

Many years ago I started making my own spaghetti sauce. Don't get me wrong, jarred spaghetti sauce has it's place and time in my life too. But, when given the option, I will always prefer making my own. I've made several types and kind. Some in the crockpot, others with meatballs, this one though is easy, simple and full of tomato flavor.

This Zucchini Noodle Spaghetti is a perfect weeknight dinner to make when you're looking for something quick and easy that is also guilt-free and a more wholesome option. The sauce here is loaded up with big hearty chunks of tomato, onion, garlic, and fresh basil (the secret weapon.)...

Wakey-wakey eggs and bakey! This mornings breakfast is brought to you by, leftovers! Okay, maybe not exactly leftovers but an accumulation of things that I indeed had leftover in my fridge that went unused through the week in some way shape or form.

For instance, the original plan for the spiralized zucchini was for zoodles in a vegan Pho. The same goes for the mushrooms. I'm not entirely sure why the tomatoes were untouched, but somehow everything always works out in the end. Just like these Baked Eggs in a Zucchini Nest!...

Lean Mean Green Power Sandwich

After a bit of a whirl wind trip to Dallas and back to Austin. And currently with a house full of two very energetic 7 year olds, momma needs some greens. How else am I going to keep up with my daughter and my nephew? With the influx of summer heat and all the madness and chaos around me right now, I figured there was no better time than now for this cool crisp veggie loaded green sandwich!

Of course, this isn't the most 'kid friendly' sandwich; unless you lucked out and have the least picky eater on the planet. So this is for the mommas, the papas, and any other parental/guardian unit that's in need of a way to power through the rest of the day. The kiddos around here opted for turkey and cheese. But, me? I'm strong, happy, and ready to go with this bad boy right here...

Over the lifetime of The Skinny Fork, I've been blessed to see such growth between myself and the blog. As strange as it may seem, we both seem to push the other to our limits in mostly positive and amazing ways. I'll be honest in saying that I'm a bit of an introvert.
