Crock Pot Pumpkin Spice Oatmeal (Instant Pot too!)

Originally when I made this oatmeal, I had pretty recently posted a Skinny Baked Pumpkin Pie Oatmeal, but these two oatmeals are pretty far apart in the realms of texture and preparation. Plus, I’ve added in new instructions so this oatmeal can be made in an instant pot (pressure cooker) in under thirty minutes!

As usual, I've been running around like a crazy woman and I really needed a pick-me-up this morning to help boost me through the day. A long, long time ago, when I was new to this wide world of cooking and sharing my recipes... I made these Healthy Peanut Butter Oatmeal Cookies for National Oatmeal Cookie Day. ...And boy-oh-boy am I ever glad that I did. This recipe right here has been on the top 10 most viewed recipes here for almost the entire existence of The Skinny Fork. There's a reason for that too. These cookies are AMAZING.

They are gluten-free, low-carb, vegetarian, vegan, and naturally GUILT FREE. It's a bonus too that they're so quick and easy to make. You will wonder from this point on how you ever lived without them.

Carrot Cake Granola

Spring is coming.

I don't know about you, but I can see the changes in the season here in Austin Texas already. It's staying daylight out longer and longer in the evenings now and the sky is a brighter shade of blue. The birds are chirping, the grass is turning green, and it's warming up to a perfect 70 degrees on most days.

I know that we will likely have a few more 'winter' days or grey rain, but it's always nice to see the onset of Spring. It's probably my favorite season (when it comes to the weather especially.) That's why I've started this weekend off right with this Spring inspired carrot cake granola!...

Baked Amish Overnight Oatmeal

As I think back, I'm not sure when or how I got turned on to Amish Oatmeal. But, I do know that it was pretty much an instant hit with my family. It's quick and easy to prepare with just a handful of basic kitchen staples that soak together overnight to bake up beautifully the next morning.

So, what is Amish Oatmeal anyway? Well, it's sort of a cross between oatmeal and bread pudding. Eggs, vanilla and milk are whisked together to create the 'custard' that the oatmeal is baked in.

Mornings. Am I right? Even though I consider myself a morning person, they are still taxing on everyone. Even me. As I was sipping on my coffee this morning while waiting for my daughter to finish getting her shoes, she asked me if I was going to eat breakfast. She couldn't understand why I hadn't eaten already and how I wasn't hungry.

Such is the way of a mom. Of course, I was hungry! But there's just no time until after I get her off to school. Once the mad dash getting her off to class is over, that's when I get to finally eat. And even then, I'll escape breakfast some days. That's why I make myself meal prep breakfast. If it's already 'ready' then I have no excuses to skip out on the most important meal of the day. Gluten-Free Banana Nut Pancakes

My mom lives out by one of the lakes here near Austin, and she keeps talking about this restaurant by her that serves some giant banana nut pancakes. And after a few too many (dozen) mentions of them, I guess the thought sort of stuck with me as inspiration. Banana nut anything is okay by me.

There's something about the smell and the taste that takes me back to my childhood. Maybe it has something to do with the fact that my mom makes some of the best banana bread around.
