It’s FriYAY and what does that mean in our house? Pizza day! How does that old jingle go?

Pizza in the morning, pizza in the evening, pizza at supper time!

That’s basically the law of the land around here. Even though my little one has pizza for lunch on Friday at school, she comes home and still wants to have pizza for dinner. Who am I to say no? It’s been a long week full of the first few days of school and we’re all pretty much exhausted at this point.

Of course, when we do pizza night at home, I like to stick to the better-for-you options while also loading us all up on our fair share of veggies. That’s where this Simple Italian Salad and Sweet Earth come into play...

Crabby Beach Sandwich

Alright, well this isn’t -exactly a recipe, but more of a ‘how-to’ sort of thing. So, feel free to create your sandwich with whatever meats and cheeses your kids enjoy. Mine? She’s all about turkey, ham, and on occasion now, cheese too! Since we’re sort of in the midst of a ‘under the sea’ sort of themed week of summer, and we’re not seafood eaters, I thought I’d create a cute little sandwich.

As it turns out, this sweet little guy would be great for any ocean, sea, or water themed party too. Thinking back, he probably would have fit right into my daughter’s ‘pirates and mermaid’ birthday a few years back now…

I thought I would squeeze one more festive dish in ahead of the 4th of July for everyone. This one is light and fresh and sure to impress with how simple it is and how amazing it tastes! It’s finally here. We’re down to the finally 7 days before school lets out for the summer for my kiddo and I honestly thing that at this point, I’m more excited than she is. I just want to get through the next few days and have the freedom of summer ahead of us. That being said, I’m also in the throes of getting beach-bum ready. Chicken Salad Lunch Box

I was asked for more snack, lunch, and meal prep box ideas - so I’ve been hard at work coming with a couple each week! This Chicken Salad Lunch Box has to be one of my favorites though. Then again, almost anything with chicken salad is a favorite of mine.

For this lunch box, I used the base for my standard chicken salad that I use in my stuffed tomatoes - and made a few adjustments to it according to what I happened to have on hand this time around. Namely swapping the cranberries for raisins, and using pecans for my nut of choice. Other than that, it’s pretty much same ole’ same ole’.

Simple Snack & Travel Boxes

The third and last box is the veggie snack box, which is full of fresh veggies including carrots, tomatoes, sugar snap peas, and zucchini. That’s all paired with a hummus. I used a local sunflower seed hummus, because it’s one of my new obsessions.Well, a lot of traveling happened this weekend and being as I’m trying to eat a more consciously while traveling, I thought I would try my hand at some travel-friendly snack boxes! I wanted to make sure that these snack boxes were simple and easy to put together while being gluten-free, soy-free, and vegetarian too!

There’s three different boxes here that give you plenty of variety to choose from. Whether you’re in the mood for something sweet or something savory, I’ve got you covered here.
