Are you getting tired of the same ol’ - same ol’ when it comes to the dessert options around the holidays? Shake things up this year and try out this delicious Whole Wheat Pumpkin Cobbler! If a pumpkin pie and a cobbler had a love child, this cobbler would be it!

This delicious wonder of a dessert makes it’s own gooey pumpkin caramel sauce while a spiced up cake forms on top to make one hell of a Fall inspired cobbler, if I do say so myself. Lightened up and made just a little better-for-you with just a few simple swaps…

Skinny Butternut Squash & Apple Soup

October 4, 2019 Amanda Plott

Oh, my goodness. Oh. My. Goodness.

The first time I intended to make this soup, I had it planned for a while , and oddly enough a similar butternut squash soup was served to me at The King's Feast of The Texas Renaissance Festival. I had never had butternut squash soup before then, but I immediately fell in love. It was thick and rich and served with some sort of toasted seed and herb topping.

It was such a good soup that I thought I would have dreams about it that night.

I was a bit curious when I got home if the recipe that I had come up with would be anything similar to the amazing one that I had at the feast. Needless to say I was somewhat skeptical that so few of ingredients would actually come together to make such an amazing soup…

Fall Breakfast Quinoa Bowl

October 17, 2018 Amanda Plott

It’s been unusually cold here in Austin, Texas lately. Generally speaking, we don’t get the first ‘cooler’ bits of weather until Halloween. But, this year we’ve already been in the 40’s - which is completely fine with me. I love Fall weather and I am always more than thrilled to get anything below 80 in October. It means that I get to use my oven and stove again without regret!

With it being cooler, overcast, and raining off and on, I thought it was high time for a nice warm hearty breakfast. And that’s exactly what this Fall power bowl is all about! I loaded this breakfast bowl up with plenty of good stuff. Quinoa, fruit, nuts, seeds, and just a touch of cinnamon to add further to the warmth of the flavors…

Chicken & Roasted Poblano Pumpkin Soup

September 26, 2018 Amanda Plott

Tis’ the season, pumpkin season! It’s officially Autumn now, which means… pumpkins galore. Hopefully, my little family will be taking out yearly venture out to the pumpkin patch farm here soon enough. That’s usually where we go to pick out our pumpkins and enjoy a local farm along with all it has to offer.

To celebrate, and bring Fall in I decided to make a soup. Soup is basically a hug in a bowl, so consider this Chicken & Roasted Poblano Pumpkin Soup a nice WARM hug in a bowl. The heat of the poblano peppers and the warmth of the pumpkin and cinnamon really work well together to make one perfectly Fall inspired meal…

Healthified Whole Wheat Pumpkin Pancakes

September 17, 2018 Amanda Plott

It’s no secret that Halloween my favorite holiday and I always like to do something a little special for it. My little girl is quite a pancake fiend. I would venture guess that she eats pancakes for breakfast just about every other morning. Except for Saturday; that is 'donut' day around here.

At any rate, with all the great pumpkin flavors going around this time of year, I thought it would be a great time to make a healthier pumpkin pancake!

No matter your age or pancake preference, these whole wheat pumpkin pancakes are a great way to start off any Fall morning! They are really easy to mix up and cook. Plus, they taste amazing with just a subtle hint of pumpkin and spice in there…

Dark Chocolate & Pumpkin Swirl Bundt Cake

September 15, 2018 Amanda Plott

We’re finally in the 80’s around here, and I can feel Fall in the air just about. It’s one of my favorite times of year. Halloween is just around the corner and pumpkin spice is featured almost anywhere you look. Bring. It. On. I am so ready to get to use my stove and oven again without having to worry about spending the rest of the day cooling the house back off. The struggle is real, y’all.

Baking is not my favorite thing to do in the kitchen. It scares and intimidates me. And today was one of those reasons why. I turned my back for (what seemed like one second) and I over-beat my batter. Meaning my cake collapsed a bit in the middle. I was frustrated beyond belief with myself, but the family didn’t mind at all. In fact, they all said how good the cake was - even though I was mad at it…
