Skinny Baked Galaxy Donuts

Last night was a full moon. So it just seemed appropriate to make these Skinny Baked Galaxy Donuts today. These donuts are baked (obviously) and are a mix of my Baked Dark Chocolate Coffee Donuts and my Unicorn Donuts. In other words, they’re a chocolate cake based donut with a colorful vanilla frosting and of course galaxy inspired sprinkles on top!

The best part is that you can use whatever space-like sprinkles you want and colors for frosting to match. My frostings were pretty dark and most of it just disappeared into the ether of the donuts only to serve as glue for the sprinkles to the donuts themselves. But, that’s fine. Giant Meatballs

I’ll be real honest, it’s been a pretty rough week for me. My mom had surgery and I’ve been down and out with almost a full week of some sort of strange migraine or headache of some sort. Baked Caprese Chicken

Cheers to easy dinners! This Baked Caprese Chicken is a real winner. With just a handful of ingredients and about 5 minutes of actual hands on time (maybe even less) this chicken is super easy, tasty, and quick to make! The recipe is easily doubled or tripled for a larger family, but I’ve left it scaled back for two servings.

So what’s caprese anyway? It’s generally a salad that includes tomatoes, cheese and either pesto or some sort of balsamic reduction. Since its Italian based, this chicken would be good paired with a simple side salad like I did, or with veggies and some pasta or zucchini noodles even. Who knew you could enjoy a PB&J for breakfast? Oh, wait. I did! This Baked PB&J Oatmeal is loosely based on a few of my other baked breakfast oatmeals but in PB&J form. Yep! There’s peanuts, peanut butter, and even jelly baked right into this oatmeal. Plus, I made it dairy-free, gluten-free, and vegetarian.

This Baked PB&J Oatmeal can be made in advance and reheats really well, meaning that it’s perfect for meal prepping and having on hand through the whole week. And, if you aren’t a fan or are allergic to nuts, you can always swap out the peanut butter for any nut free alternative. No time to labor over the stove to make dinner? This Instant Pot Loaded Baked Potato Soup is quick and easy to make with almost all of the cook time being hands off in the instant pot. You start this soup off with cooking the bacon and then adding in the potatoes and broth to that. Yep, that’s right. The bacon is loaded into the soup from the very start!

Who needs chicken? These Baked Buffalo Tofu Strips are a great vegetarian alternative to the long time favorite of buffalo chicken. They’re breaded in panko and baked to perfection. That’s right, no frying needed! It’s truly one of my most favorite ways to eat tofu.

The panko seasoning is the star of the show. Tofu doesn’t have any real flavor so you have to put it with a lot of boldness to get anything out of it. That’s why I seasoned the hell out of the breading mixture. But, feel free to add more to it and adjust accordingly to your tastes. Just keep in mind that this is where the MOST of your flavor is going to come from. It should taste very spicy and very salty!…
