Giant Halloween Cookies

So far it seems that I have escaped the making of my chocolate ginger bat cookies this year. I think my daughter has been too busy with school and cheer that she hasn’t had the time to remember to ask me for them. And that’s totally find with me because that means that I have the time to make other Halloween inspired cookies - like these Giant Halloween Cookies!

Antipasto Eyeballs

Sometimes you just need a spooky little side dish or appetizer to really make your day. It’s been a rather rough few weeks between pom poms and covid running rampant through my house; infecting everyone even me. Thankfully, the vaccine left me with a really mild case and just a handful of minor symptoms. Now that everyone is on the mend, we can move along with Halloween preparation!

I’m calling this tasty treat ‘Antipasto Eyeballs’ because they look exactly like that. Fresh mozzarella, olives, and some prosciutto is all you need to make this funny little appetizer. Yep, that’s right - just three ingredients and a few minutes of time…

Brain Meatloaf

I’ve taken my classic meatloaf recipe and molded it into the shape of a brain for a fun Halloween inspired twist. My meatloaf is made with plenty of vegetables loaded into it, onion, bell pepper, and zucchini too! So it’s healthified and lightened up while still being scary good.

Usually meatloaf is made with ketchup, but I decided to use tomato sauce and tomato paste along with salt and pepper to lower the amount of sugar and also to be able to control the level of salt. It’s a good little swap that doesn’t effect the taste or texture and gives you a lot more bang for your buck!

Halloween is coming! And I couldn’t be more excited. For a long time now, Halloween has been my most favorite holiday, but I’m having to make a few changes to my usual routine lately since we’ve got a sensitive stomach in the house. Black Burger Buns (Bread Machine)

Halloween is coming! I’m about to get my Halloween decorations down, the weather is turning cooler, and I couldn’t be more ready for the Fall. The world might be more crazy than ever, but I’m going to enjoy my favorite holiday this year, one way or another. Now… usually around this time of year I’m coming ip with all recipes pumpkin and Halloween inspired. This year? No different!

These Black Burger Buns are fairly easy to make with a bread machine. And their dark color makes them PERFECT for a Halloween inspired burger. I made ‘werewolf’ burgers in that they were mostly just neat colors that made me think of werewolves; black, purples, deep reds, etc…

Halloween Red Velvet Chocolate Bark

Alright so… bare with me here. I know that chocolate isn’t the most healthy thing out there but, Halloween is just around the corner and as I like to say ‘everything in moderation’. Plus, we’re using some dark chocolate here so… that’s more healthy than other options, right? The truth is, I’m a firm believer in allowing yourself some treats here and there to keep yourself sane and from making worse decisions later.

So to make this bark a little more guilt-free, I decided to start it off with some dark chocolate. It’s my excuse for any kind of chocolate related candies or cakes. At least it has a few more health benefits than some of the other chocolates out there. That’s my story at least, and I’m sticking to it.
