Green Goddess Jar Salad

I’m pretty much in love with jar salads right now. They’re just so easy to toss a few together and have them ready to grab-and-go for busy day lunches. This Green Goddess Jar Salad is probably one of my most favorites of the ones that I’ve made so far. It’s light and has a really good mix of textures and flavors between the lettuce, quinoa, tangy pickled onions, and feta cheese too!

As with any jar salad, the layering here is really important. You want to be sure to keep the lettuce and feta up off the dressing at the bottom. When you’re ready to eat it, you just give it a quick shake and either eat straight out of the container or pour out onto a bowl or salad plate…

Mediterranean Orzo Jar Salad

If you’re looking for quick, easy, make-ahead lunch ideas then look no further! This Mediterranean Orzo Jar Salad is probably going to be my go-to lunch for a good long while. It’s super fast to make and tastes absolutely amazing. Plus, making them up ahead of times makes them all the more convenient. This salad is light but also surprisingly filling, making it perfect for the start of Summer here.

Breakfast Twice Baked Potato

Who says you can’t have a baked potato for breakfast? This potato is baked twice over and loaded with the breakfast favorites of bacon, egg, and cheese! Instant Pot Creme Brûlée

I’ve only had creme brûlée a handful of times in my life and I’ve never ventured to make it for myself because I always had it in my head that it would be a complicated dessert that likely required some sort of kitchen torch of which I can’t seem to allow myself. But, as it turns out, creme brûlée is actually a pretty simple and easy to make dessert. Especially when you make it using a pressure cooker!

Strawberry Pop-Tart Overnight Oats

Just a few more weeks and my kiddo will be out for summer. And these last few weeks are always super DUPER busy. In order to avoid skipping out on breakfast in the morning, I like to have a few things on hand that I can grab-and-go eat with no excuses and no guilt. That’s where these Strawberry Pop-Tart Overnight Oats come into play.

Overnight oats are tasty, easy to make, and an excellent thing to meal prep. The oats themselves are left overnight in a mixture of almond milk, greek yogurt, some sweetener, and real-deal cake batter flavor. Chicken Lunch Wrap

Who has two thumbs and loves the ‘cool wrap’ from Chick-fil-a? This girl.

It’s true, the cool wrap is one of my favorite things to get from the fast food chain. Mostly because it’s really such a healthy option. Grilled chicken, plenty of greens… and what is that wrap? Well, with a quick search over their menu and the ingredients for the wrap, I found that a ‘lavash pita’ bread is used.

Lavash pita bread is a very thin and very soft pita bread that is perfectly foldable, rollable, and doesn’t tear very easily. It holds up extraordinarily well. It’s officially my ‘tortilla’ replacement, I think…
