So, while it may be starting to cool off, it’s still very hot here. That being said as we slide into the end of August I am READY for Fall this year more than I even usually am. Which is saying a lot since Fall is probably my favorite season next to Spring - which we entirely skipped this year somehow and instead just went Winter straight into Summer. Bleh.

This Apple Pecan Jar Salad gives me all the vibes of Fall while also being light, cold, and crisp while we’re in the middle of this heat still. So it’s definitely a win-win situation. Plus, these jar salads are absolutely perfect for having on hand when you want and need a bite for lunch but also don’t have time to whip something up. Make ahead meals for the win!…

Caprese Jar Salad

It’s salad season, and right now, I’m all about these jar salads. I love having a few ready made lunches on hand in the fridge that are put together and just need a good shake up to enjoy. They make for great grab-and-go lunches too since you can eat them straight out of the jar. This particular one is based one of my all time favorite salads, a caprese.

A caprese salad is tomatoes, fresh mozzarella, and usually some sort of greens to go along with it. I started this one off with an Italian based dressing along with some basil pearled couscous to make the salad just a touch more filling…

Green Goddess Jar Salad

I’m pretty much in love with jar salads right now. They’re just so easy to toss a few together and have them ready to grab-and-go for busy day lunches. This Green Goddess Jar Salad is probably one of my most favorites of the ones that I’ve made so far. It’s light and has a really good mix of textures and flavors between the lettuce, quinoa, tangy pickled onions, and feta cheese too!

As with any jar salad, the layering here is really important. You want to be sure to keep the lettuce and feta up off the dressing at the bottom. When you’re ready to eat it, you just give it a quick shake and either eat straight out of the container or pour out onto a bowl or salad plate…

Mediterranean Orzo Jar Salad

If you’re looking for quick, easy, make-ahead lunch ideas then look no further! This Mediterranean Orzo Jar Salad is probably going to be my go-to lunch for a good long while. It’s super fast to make and tastes absolutely amazing. Plus, making them up ahead of times makes them all the more convenient. This salad is light but also surprisingly filling, making it perfect for the start of Summer here.

You get a little bit of everything in this salad. Plenty of veggies, cool baby spinach, some orzo pasta, and a homemade dressing that’s truly one of the most simple dressings that I’ve ever made for a salad. Oh, and who could say no to the feta cheese in here?!…

Naked 'Tortilla Trend' Club Sandwich

We’ve all seen that new tortilla trend that’s been going around, but sometimes a girl just wants to get a little naked. I’ve stripped the tortilla out of this all together and went with a large lettuce leaf instead. This makes this trend low carb, gluten free, and still every bit as delicious. It still has all the naughty bits, mainly the cheese and the bacon!

Another great thing about this is it’s perfect for making ahead and having on hand as an easy grab-and-go lunch for the week ahead. Just make them and store them in the fridge as a meal prep lunch that anyone can enjoy guilt free…

Club Sandwich

Who can say no to a traditional club sandwich? This Club Sandwich is made just a little better-for-you with a few simple swaps that keep it perfectly classic and yet guilt free! As with any club sandwich, this one starts out with sliced deli ham and turkey, and then paired with bacon, cheese, tomato and some lettuce. All on some toasted bred with a smear of light mayo.

It’s good stuff and goes well with a light salad, a cup of soup, or even some salt and vinegar kettle chips like I had. It was simple, classic, and so so good! Of course, I wouldn’t say no to some pickles on the side too…
