I know it’s after Thanksgiving and ‘pumpkin spice’ season, but look… I just HAD to share this dessert. These Pumpkin Spice Blondies are AMAZE and the cream sauce is something I think I could bathe in. To be completely honest, you should make this dessert at all times of the year. Fall or other wise. It’s great leading into Thanksgiving, but also great to lead the way out too.

It was my brother’s birthday celebration this past weekend, and it sure was a lot different from how it was last year for sooo many reasons. Thankfully vaccinations are in place and we got to celebrate together once again! In lieu of a cake though, my brother wanted blondies this year which I am totally down for! Don’t get me wrong, I love cake as much as the next girl, but there’s something to be said about a good blondie.

These blondies are my healthified take on the ones that you’ll find at one of those chain restaurants. It was always my most favorite dessert there. What with the warm blondie with white chocolate chips, some vanilla ice cream, and that AMAZING maple cream cheese sauce on top. Mmmm…

Circus Animal Cookie Blondies

If you love blondies and you love circus animal cookies then you are going to go nuts over these Circus Animal Cookie Blondies! Blondies are basically a vanilla (non-chocolate) version of brownies. So they’re a bit more dense and moist than cake.

These blondies are super easy to make and are whipped up all in one bowl. Plus, look at how colorful they are! Now that Valentine’s Day is over, I’m already on the thought path of St. Patrick’s Day! I love St. Patrick’s day for a couple of reasons. One being that I’ve got some Irish blood in me. Out of all the desserts out there, I would have to say that blondies would be one of my favorites! I think it has to do with them being the ‘vanilla’ version of brownies, which is also another favorite. I love that blondies are a more dense and decadent ‘cake’ that almost always involve white chocolate in them.

These 'One Pot' Skinny Pumpkin Blondies are no different, except that they have the flavors of Fall in them. Including pumpkin and plenty of cinnamon goodness, and a few other warm spices!
