Baked Buratta

Let me tell you guys something. I love cheese. It is my weakness. Not ice cream, or cookies, or cake - but cheese. Glorious cheese in just about any form. Sharp, sliced, shredded, fresh, soft, hard, crumbled. Any of it. All of it. I haven’t met a cheese that I don’t like, and I’ve never tried buratta before even though I’ve always wanted to.

Buratta is a pretty cool cheese. It’s basically a creamy spreadable cheese tucked away inside a skin of fresh mozzarella. So when you cut into it, the creamy cheese oozes out and it’s so so good. I didn’t want to have it just all on it’s own, so I decided to make this Baked Buratta. The name is sort of a lie since the buratta itself isn’t baked.

This Baked Buratta is super simple to make. Cherry tomatoes, oil, some seasoning; it’s roasted together and then topped off with the buratta which warms up just enough to make it easy to cut through and use to spread. There’s also fresh basil on top and if you want a little extra burst of flavor, some balsamic reduction is a great addition!

I served mine with slices of a baguette and it was literally dinner.

No regrets.

Oven roasted tomatoes topped off with some simple buratta cheese, fresh basil, and even a drizzle of balsamic reduction. Simple and sophisticated!

Ingredients

  • 1 Pt. Cherry Tomatoes
  • 2 Tbsp. Extra Virgin Olive Oil
  • 1 Tsp. Minced Garlic
  • Salt & Pepper to Taste
  • 8 Oz. Buratta Cheese
  • 1 Bunch of Fresh Basil, Chopped
  • Optional Drizzle of Balsamic Reduction

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Place the 1 Pt. Cherry Tomatoes, 2 Tbsp. Extra Virgin Olive Oil, 1 Tsp. Minced Garlic, and Salt & Pepper to Taste in a small oven save skillet.
  3. Put the skillet into the oven and bake for 30 minutes.
  4. Remove from the oven and lightly mash the tomatoes before placing back into the oven for another 15 minutes.
  5. Once done, remove from the oven and top with the 8 Oz. Buratta Cheese and allow it to set for a few minutes.
  6. Top it all off with the chopped basil and a drizzle of balsamic reduction if desired.
  7. Serve with a sliced baguette and enjoy right away!
