Bananas Foster Rice Cake

This Bananas Foster Rice Cake would make for a tasty breakfast, a part of brunch, or even as a dessert. I love that it’s a hand held way to enjoy a bananas foster while also being decadent and yet still guilt-free!

I topped mine off with some vanilla cold foam and a drizzle of caramel sauce, but some vanilla greek yogurt would be really good here too. Or even a lightened up vanilla ice cream or frozen yogurt.

Usually bananas foster is made with rum or bourbon, but I went with Liquor 43. No matter which one you decide to go with, you’ll love it just the same.

This guilt-free treat combines the classic flavors of bananas foster with a light and fluffy rice cake base. It's the perfect balance of sweetness and satisfaction in every bite.

Ingredients

  • 1 Tbsp. Butter
  • 2 Tbsp. Brown Sugar Sweetener
  • Pinch Ground Cinnamon
  • 1 Banana, Sliced
  • 2 Tbsp. Alcohol (Rum, Bourbon, Liquor 43, etc.)
  • 2 Caramel Rice Cakes

Instructions

  1. Melt the 1 Tbsp. Butter over medium heat in a small skillet.
  2. Add in the 2 Tbsp. Brown Sugar Sweetener and a Pinch of Ground Cinnamon. Stir until the sugar dissolves.
  3. Transfer the 1 sliced Banana to the skillet and cook for a few minutes until the banana is softened.
  4. Turn the heat off and add in the 2 Tbsp. Alcohol.
  5. Carefully use a long lighter to light the alcohol on fire and baste the bananas until the flame dies off.
  6. Once the flames are gone, divide the banana evenly among the 2 Caramel Rice Cakes and drizzle with caramel or serve with a vanilla greek yogurt or light vanilla ice cream to enjoy!
