A delicious and fully loaded open face toast that serves up like a meal in itself. Fresh tomatoes, herbs, burrata cheese, pesto and prosciutto piled high!

Ingredients

  • 1 C. Grape Tomatoes, Halved
  • 2 Tsp. Extra Virgin Olive Oil
  • Pinch Sea Salt
  • 1/2 C. Balsamic Vinegar
  • 2 Thick Slices Sourdough Bread
  • 2 Tbsp. Light Mayonnaise
  • 4 Slices Prosciutto
  • 4 Oz. Burrata Cheese, Halved
  • 2 Tbsp. Pesto
  • Fresh Basil, Sliced Thinly

Instructions

  1. Place the 1 C. Grape Tomatoes, 2 Tsp. Extra Virgin Olive Oil, and Pinch Sea Salt into a small bowl and toss together; set aside.
  2. In a small pot or skillet, heat the 1/2 C. Balsamic Vinegar over a medium-high heat until bubbling; reduce heat to simmer for about 10 minutes; stirring on occasion until reduced down until thick enough to stick to the back of a spoon. Set aside to cool slightly.
  3. Spread the 2 Thick Slices Sourdough Bread with the 2 Tbsp. Light Mayonnaise divided between all sides evenly.
  4. Heat a large skillet over medium heat and lightly coat with non-stick cooking spray.
  5. Toast the bread on both sides until browned and crispy.
  6. Set each piece of toast on a plate and top each with two slices of Prosciutto.
  7. Place 2 Oz. Burata Cheese onto each followed by 1 Tbsp. Pesto.
  8. Divide the tomatoes evenly between the toasts before garnishing with fresh basil and the balsamic reduction.
  9. Once done, enjoy right away!
