This wholesome and nutritious dish takes the traditional flavors of a Caprese salad and combines them with protein-packed quinoa for a guilt-free meal that's bursting with flavor.

Ingredients

  • 1 C. Marinara Sauce
  • 2 Tbsp. Tomato Paste
  • 1/3 C. Heavy Cream
  • 1/3 C. Shredded Parmesan Cheese
  • 1/2 Tsp. Crushed Red Pepper Flakes
  • 2 C. Cooked Quinoa
  • 1 C. Fat Free Mozzarella
  • 3/4 C. Grape Tomatoes, Halved
  • 1 Bunch Fresh Basil, Cut into Ribbons
  • Salt & Pepper to Taste

Instructions

  1. Preheat the oven to 350 degrees F. and lightly coat the inside of an 8x8" or 9x9" baking dish with non-stick spray; set aside.
  2. Heat the 1 C. Marinara Sauce and 2 Tbsp. Tomato Paste in a medium saucepan.
  3. Once warm, stir in the 1/3 C. Heavy Cream, 1/3 C. Shredded Parmesan Cheese, 1/2 Tsp. Crushed Red Pepper Flakes, salt & pepper to taste.
  4. Remove from the heat and fold in the 2 C. Cooked Quinoa, 1/2 C. of the Fat Free Mozzarella, 1/2 C. of the Grape Tomatoes, and half of the Fresh Basil.
  5. Transfer the mixture to the prepared baking dish and top with the remaining 1/2 C. of the Fat Free Mozzarella, and the remaining half of the Grape Tomatoes.
  6. Place the dish into the oven and bake for 15 minutes. Then turn on the broiler and broil for a minute or two.
  7. Once done, remove from the oven and top with the remaining half of the Fresh Basil and any balsamic reduction if desired to enjoy right away!
