These tasty oat bites are made with just a handful of ingredients and a few minutes of time. They’re perfectly sweet and just filling enough to be part of a meal or a snack! They taste just a little bit like the classic Girl Scout cookies known as Caramel Delights.

Chocolate Peanut Butter Oatmeal Bites

Packed with wholesome ingredients like oats, peanut butter, almond butter, coconut, and a hint of chocolate, these bites are the perfect combination of sweet and satisfying.

Ingredients

Chocolate Layer
  • 3/4 C. Semi-Sweet Chocolate Chips
  • 2 Tsp. Coconut Oil
Oat Layer
  • 1 1/2 C. Quick Oats
  • 1 1/2 Tsp. Maple Syrup
  • 1/3 C. Vanilla Almond Butter, Melted
  • 1-2 Tbsp. Water, As Needed
Coconut Layer
  • 1/3 C. Creamy Peanut Butter, Melted
  • 1/3 C. Vanilla Almond Butter, Melted
  • 1 C. Unsweetened Shredded Coconut

Instructions

  1. Line a cupcake tin with paper or silicone liners.
  2. Place the 3/4 C. Semi-Sweet Chocolate Chips and 2 Tsp. Coconut Oil into a microwave safe bowl and microwave at 20 second intervals until melted; stir in between.
  3. Place about 1 Tsp. of the chocolate into the bottom of each liner.
  4. In another bowl, mix together the 1 1/2 C. Quick Oats, 1 1/2 Tsp. Maple Syrup, and 1/3 C. Vanilla Almond Butter. If it's too dry, add in some water and stir until desired consistency is reached.
  5. Place 2 Tbsp. of the oat mixture into the cupcake liners and press down slightly.
  6. Transfer the tin to the freezer for a few minutes.
  7. In another bowl, stir together the 1/3 C. Creamy Peanut Butter, 1/3 C. Vanilla Almond Butter, and 1 C. Unsweetened Shredded Coconut.
  8. Once the chocolate and oats have set in the freezer, remove the tin and scoop 1 Tbsp. of the coconut mixture into each cupcake liner. Drizzle with any remaining chocolate if desired.
  9. Place the tin back into the freezer for at least 30 more minutes until it's all firmed up.
  10. When it's all set, enjoy right away!
  11. Store leftovers in the fridge to enjoy through the week.
