And with the end of summer on our heels, I thought I might throw a few more good strawberry recipes into the mix before they are too far out of season. Today it's going to be a whopping 107 in Austin, Texas! Who doesn't love cupcakes, especially white wedding cake style cupcakes. Wedding cake has to be one of my most favorite flavors. Yes, I consider 'wedding cake' a flavor. That could have something to do with the fact that I grew up on 'wedding cake' flavored snow cones during the summer, or just that wedding cake is known for being rich and decadent.

Skinny Funfetti Cake with Buttercream Frosting

There is nothing that puts a smile on my face more than my daughter and rainbow sprinkles. That's why my daughter and I got on it this weekend and made this oh-so-pretty confetti cake! Confetti, funfetti, it's all the same thing. It means SPRINKLES, and lots of them too! We're talking, I bought a whole container of rainbow sprinkles specifically to use in and on this cake. And let's just say, I am not disappointed.

Of course, by saying my daughter helped me, it really means that she stood on the chair in the kitchen, dumping things into the bowl and sticking her cute little fingers into everything sweet she could manage. But you know what? It's helping her with her math and we're growing and learning together. One cake at a time…

Skinny Carrot Cake Roll with Cream Cheese Filling

Just in time for Easter! This morning I woke up with a Spring in my step (pun intended) and just had to make this Skinny Carrot Cake Roll with Cream Cheese Filling. I based the recipe loosely on the Pumpkin Cream Cheese Roll that I make in the fall. But, there's not ever a bad time for a cream cheese roll, in my opinion.

I kept this recipe pretty simple, using a boxed cake mix with a few add-ins to beef it up a bit. I kept it light with my usual swaps ins for a cake mix and even used a handy new powdered sugar replacement in the cream cheese filling.
