Who the hell ever said that black-eyed peas had to just be a New Year’s day thing? Yes, I’m deliberately posting this recipe AFTER the first of the year to be a bit of a rebel.

Every year in my house, it’s the same old debate. What do we do with black-eyed peas to make them more edible. Let’s face it, black-eyed peas earned their nickname ‘dirt peas’ for a reason. Over the years, I’d like to think that I’ve come up with a few clever ways.

This year though, with a cold running rampant through the house… something FRESH and light sounded like what we all needed…

Oyi,  oyi, oyi! We are in the THICK of summer right now. It is H. O. T. - HOT! But, one thing I'm not mad about is the plethora of summer veggies and fruits that comes along with the heat. The summer squash and tomatoes are in season here right now and I am eating it up. Pun totally intended.

Summer squash is one of my favorite veggies, that's because they are so versatile. And while there's a lot of things that you can do with them, I've been craving pasta - so that's where they went today. Not just any pasta though. Mediterranean Olive Salad

As a health food blogger, I like to stay in the know about all the different diets and ways of eating that are currently being circulated. One of the ones that's become quite popular over the past few years has been the Mediterranean Diet.

The Mediterranean Diet is pretty simple and incorporates the basics of healthy eating; including fruits, vegetables, fish, whole grains, and limited unhealthy fats. Any way of eating that allows for olive oil and a few glasses of wine is a bonus in my eyes.

The basis of the Mediterranean Diet is eating primarily plant-based foods, such as fruits and vegetables, whole grains, legumes and nuts. Replacing butter with healthy fats, such as olive oil. Using herbs and spices instead of salt to flavor your foods. Limiting red meat and eating fish and poultry at least two times a week. Plus, red wine in moderation!

All of these things are pretty much how we eat in my house on a day to day basis...

Healthy Mixed Berry Gummy Bears

My little one is entirely obsessed with anything that is gummy. Hearts, bears, and bunnies - oh my! Lately, I've been buying some fancy all natural, gluten free, organic gummies to put in her lunch, because it makes me feel a bit better. But, oh-my-goodness those things are expensive! Especially when she's eating her weight in them every day.

Sort of defeats the health benefits I'm trying to get into her too!

So as I was sitting here pondering my gummy dilemma I happened to remember a while back I came across this great idea on how to make your own gummy fruit snacks. I was a little early since I've tried to do this a time or two before and could never seem to get them to come out right. But, I thought it was time to give the homemade snacks another try anyway.

And boy am I glad that I did!...

Spinach & Pea Tortellini

The first time that I ever remember eating tortellini was probably back when I was in junior high (yikes - maybe even further back than that!) My dad must have been in charge of dinner that night because I remember he was the one standing at the stove cooking up those perfect little tender shells stuffed with fresh cheeses. And yeah, he even used BUITONI® pasta back then too.

Now, of course he is and has always been a much different home cook than myself. He had made something that was a little heavier; some sort of Alfredo sauce to go over the tortellini and green peas, which was then topped off with some bits of bacon. Talk about decadent, but at least he had some green in there!

It was one of the most amazing things that I had ever tasted.

I'm not sure where he got the original recipe idea from, but I know that for one reason or another that meal still stands out in my mind today...

Mango Chile Lime Popsicles (Paletas)

A couple of months ago I was out at Eeyore's birthday here in Austin.

Yes... we celebrate Eeyore's birthday here. It's quite a thing, actually.

Anyway! It was pretty warm out that day and there was a vendor selling some rather interesting sounding homemade organic local popsicles. One of the flavors on the list was a mango chile flavor.

Of course, that's the one that I ordered! Unfortunately, they were all sold out. Ergh!

Well, it sounded easy enough. I've made my share of popsicles in the past so I thought I'd try my hand at this mango chile one too!
