BLT Breakfast Bowl

Who doesn’t like a good BLT? Bacon makes just about everything better. Even breakfast! This Breakfast BLT Bowl is one of the quickest, easiest, and most delicious breakfasts that I’ve had in a while. Again, I’ve still got leftover eggs in my fridge (I’m down to just two now!) and I’m finding any excuse and way possible to use them up.

Being as I’m keeping things simple lately in the kitchen, and knowing how basic and easy a BLT is, I thought why not make a BLT into something for breakfast? And why stop there? Let’s turn it into a breakfast bowl at that!

Simple Wasa Cracker Snack

My fridge, just like most fridges right now, is stocked full of hard boiled bright colored eggs. And no matter how prepared any of us are for it… we always always have leftovers that we just don’t know what to do with. Italian Lunch Box

I was sort of slightly tasked with coming up with some fun and easy lunch(able) ideas recently. It seems like breakfast is pretty easy, dinner is almost always planned, it’s lunch that most people seem to have the greatest trouble with. I know that if I make up a few little lunch boxes ahead of time, that I’m a lot more likely to eat those, rather than going without or eating something I really shouldn’t.

For me, I like light lunches. Snackable lunches. Something finger-friendly that I can nom on while working at my desk. Right? Well, this Italian Lunch Box is just that! Who the hell ever said that black-eyed peas had to just be a New Year’s day thing? Yes, I’m deliberately posting this recipe AFTER the first of the year to be a bit of a rebel.

Every year in my house, it’s the same old debate. What do we do with black-eyed peas to make them more edible. Let’s face it, black-eyed peas earned their nickname ‘dirt peas’ for a reason. Over the years, I’d like to think that I’ve come up with a few clever ways.

Roasted Tomato Soup

There is one thing for sure, no one is ever too old to enjoy tomato soup! One of my best memories growing up, had to have been the simple and easy dinner my mom would make on cold Fall or winter days… and that was a grilled cheese and tomato soup. Of course, even though you won’t grow out of tomato soup, your tastes do change. So today, I’ve elevated the classic and my favorite.

I’ve made plenty of tomato soup in the past, but I saw a rather ingenious hack not so long ago about making it by easily and with fresh tomatoes! No other cooking is involved other than that! Roasting the tomatoes also gives a smoky depth of flavor, that you otherwise wouldn’t have too…
